Scallop is one of the most popular shellfish used for sushi and sashimi. It’s also one of the few that are served raw.

The flavor of scallops are sweet and mild. They have a semi-soft texture.

Some of the best scallops in the world come from Hokkaido, in northern Japan. These tend to be quite expensive, but worth the price.
