Ishidai – Striped Beakfish

Ishidai, or striped beakfish, is a rare, seasonal fish. It’s often used for sushi and sashimi.

It’s in season in the summer and fall. Even in Japan it can be hard to find. In the US it’s extremely rare.

Ishidai is considered a shiromi, or white fish. And it has a firm texture, and a mild, sweet flavor.
