What’s the difference between otoro and chutoro?
Otoro is significantly fattier. It comes from the belly of the hon maguro (bluefin tuna). And the otoro at the bottom of the belly can sometimes have large strips of sinew.
Chutoro is less fatty. And it can be found on the belly and the back of the fish. It’s usually located near the skin. And it has a milder flavor. Chutoro is still soft but not oily like otoro.
