Nova Brewing Brings Microbrew Sake to L.A.
Tiny Nova Brewing recently launched in Los Angeles, California. They aim to produce sake that is uniquely Californian in style. This means using Calrose rice, locally-derived koji, and municipal water. And with one product they aim to brew a more wine-like sake.
Nova Brewing makes some admiral brewing choices like using shizuku-method drip pressing for one sake and black koji for another.
They’ve even produced a beer using sake yeast. All of this sounds awesome to us and we’re looking forward to tasting some of their products.
LA Eater has the scoop. It should be noted that Nova Brewing is not the first LA sake to be brewed in over 70 years. Roga Sake has been around for a few years and is based in the metropolitan area, as well.
Load Up on Karuizawa Whisky at a Hong Kong Auction
In a tale of haves and have-nots, the Bonhams auction house will be selling over 90 Karuizawa whiskies on May 21st. These ultra-rare whiskies from the legendary shuttered distillery will command staggering prices. A 50-year-old Karuizawa is on the block and may set you back a couple of Bitcoin!
