Kinmedai – Bigeye Snapper

Kinmedai are a seasonal fish that are caught deep in the open ocean. Though their name means bigeye snapper, they are not in the snapper family.

Kinmedai are a popular type of sushi and sashimi when available. Their season runs from the winter until mid-spring. The skin is often left on and is served aburi (flame-seared).
