Omachi is arguably the most significant sake rice strain. Many of the great sakamai can trace their roots to Omachi. This heirloom strain from Okayama has massive grains and is very tall. It’s therefore quite successful to being knocked over by heavy winds (lodging). The reward can be a sake with great depth, a varying degree of fruitiness depending upon polishing, and good structure. Herbal notes are typical in sake made with Omachi rice.
