The Pot Still

an illustration of pot still dynamics

The pot still is an ancient device used to distill a fermented alcoholic liquid into a spirit. It requires a batch process, lots of physical labor, and is inefficient and expensive to operate. Their basic form hasn’t changed much over the centuries, though you will find endless variations of design. Many variables that affect quality exist based upon the specific shape, size, and materials of the pot still. They are capable of producing flavorful, rich spirits. Many distillers still use the venerable pot still due to the quality of distillate it can produce.
