A cap from Dassai 39. This Junmai Daiginjo uses Yamada Nishiki rice milled down to only 39% (61% removed) to produce and incredibly smooth, fruity, and floral seishu. Despite the high milling rate: Dassai 39 is not as expensive as most of its competitors. This is, in part, due to Asahi Shuzo’s efficient and modern approach to brewing. Dassai sake is only Junmai Daiginjo. “39” falls in between the flagship Dassai 45 and the higher-end Dassai 23.
