Mu Junmai Daiginjo is made my Yaegaki Sake and Spirits (ヤヱガキ酒造) of Hyogo. This sake is brewed with Yamada Nishiki and Gohyakumangoku rice. It’s soft and fruity with a touch of umami. It is an outstanding foil for sashimi at the sushi bar.
